Quick & easy high protein vegan salad made with quinoa, broccoli, chickpeas, sunflowers seeds, sun-dried tomatoes and fresh dill and parley. This healthy recipe will fill you up and keep you energized.

Ingredients
  • 1 cup dry quinoa
  • 2 tbps olive oil
  • ¼ cup red onion
  • 4 cups broccoli florets
  • 1½ cup chickpeas (1 can of 398 ml)
  • juice of 1 lemon
  • ¼ cup fresh dill
  • 1 handful fresh italian parsley
  • ¼ cup sun-dried tomatoes, chopped
  • ½ cup sunflower seeds
  • salt & pepper, to taste


Instructions
  1. Cook quinoa according to the package instructions
  2. In a medium skillet, combine the olive oil, red onion and broccoli florets over medium heat.
  3. Simmer 5 minutes or until the the veggies have softened.
  4. In a large salad bowl, add cooked quinoa, cooked broccoli and red onion, chickpeas, sun-dried tomatoes, fresh dill and parley.
  5. Squeeze the juice of 1 lemon.
  6. Toss to combine
  7. Season with salt and pepper to taste
