Ingredients

  • Onion, chopped
  • Garlic, peeled and chopped
  • Selection of Mushrooms, chopped
  • Paprika 
  • Salt & Pepper, to taste
  • Sour cream
  • Cream
  • Butter or Coconut Oil, for frying
  • Vegetable Stock (Optional)


Instructions

  1. Heat butter or coconut oil in a frying pan. 
  2. When hot, add the chopped onion and garlic. 
  3. Cook until starting to soften and colour. 
  4. Add the mushrooms, paprika, salt and pepper to taste, along with more butter or coconut oil, if needed. 
  5. Cook until the mushrooms have reduced and cooked to your liking. You may need to add more butter or coconut oil along the way, or you could add the optional vegetable stock instead, a couple of tablespoons at a time to help the mushrooms cook. 
  6. Once the mushrooms are cooked, add sour cream and cream. If you're making the dish for one then a couple of tablespoons of each should do it, for more add a quarter of a cup of each. 
  7. Allow the sauce to bubble away and thicken for a few minutes. 
  8. Serve and enjoy.
